2 Delicious Coconut Recipes

Coconut is the speciality of South Indian dishes which makes them healthy and nutritious . Generally we do noy know how to induce coconut in day to day diet except for drinking coconut water . So here are two deliciuos recipes made from coconut which are a great combination of coconut and other green vegetables.

Vegetables in Coconut Gravy (AVIAL)

Serves 6 people

Ingredients:
1 cup coconut grated
5 green chillies
1 teaspoon cumin seeds
1 cup water
100gm yam peeled and cut into4cm*1cm*1cm pieces
100gm cluster beans cut into 4 cm long pieces
100gm snake gourd peeled and cut into 4cm pieces
100gm French beans cut into 4cm long pieces
1 green unripe banana peeled and cut into 4 cm pieces
1 drumstick cut into 4cm long pieces
100gm red pumpkin peeled and cut into 4cm pieces
2 and half teaspoons salt
Half teaspoon turmeric powder
1 cup curd beaten
1 medium tomato cut into slices1 cm thick
20 small curry leaves
1 tablespoon coconut oil (optional)
Water on lid: ¾ cup

Method:
Grind into paste coconut green chillies and cumin seeds, adding half cup water gradually. Do not add too much water as it will spoil the mixture and coconut will not grind

Put remaining water (1/2 cup), yam, cluster beans and snake gourd in a sauce pan or handi. Bring it to boil on high heat.

Reduce heat to low. Cover the pan with lid and pour ¼ cup water on the lid. Simmer for 10 minutes or till vegetables are half cooked.Add French beans, banana, drumstick, pumpkin, and salt and turmeric powder. Mix. Cover. Add ¼ cup water to the water already on the lid. Simmer till vegetables are tender (about 20 minutes).

Add coconut paste, curd, tomato and curry leaves. Mix. Increase the heat to high. Bring to boil.

Reduce heat to low. Cover. Add ¼ cup water to water already on the lid. Simmer for 10 minutes.

Remove from heat. Pour coconut oil over the gravy. Serve hot with rice. If you want you can garnish with finely chopped coriander leaves.

This delicious South Indian dish is healthy and uses less of oil and full of various vegetables good for our health.

French Beans with Coconut and Garlic

Serves 6 people
Ingredients:
1 cup coconut grated
2 green chillies chopped
20 cloves garlic chopped
1/3 cup vegetable oil
1 and half spoons mustard seeds
20 small curry leaves
800gm French beans cut diagonally into 2.5cm long strips
2 and half teaspoons salt
½ teaspoon turmeric powder
Water on lid: ½ cup

Method:

Finely grind coconut, green chillies and garlic. Add a little bit water to the paste if required, but remember not to add much water as it will not let coconut grind.

Heat oil in sauce pan or Handi on medium heat for about 3 minutes. Add mustard seeds. When they start crackling, add curry leaves. Stir for a few seconds. Add French beans, salt and turmeric powder and mix it well.
Reduce heat to low. Cover it with the lid. Put ¼ cup water on the lid. Cook till French beans are half tender for about 10 minutes.

Add coconut mixture from the grinder to the saucepan. Mix them together. Cover the handi back again. Add ¼ cup water to the water already on the lid. Cook till beans are tender about 10 minutes. Serve hot with breads or chapatti. It is an excellent combination which will be liked by everyone. Garnish it with finely chopped coriander leaves.

Since coconut is the main ingredient in both the dishes they are full of nutrition and use very less of oil if you notice
