Best Okra & Lady Fingure Recipes


Okra or ladies finger is a super vegetable with many nutritional qualities and health benefits. It is a fibrous food; helps to stabilize the blood sugar level and brings cholesterol level down. It also prevents constipation. It also helps to fight summer heat. Okra has many other benefits. Here are few healthy and tasty recipes of okra.

Boiled Okra:
Wash okra very well. Boil water with salt. In it pour half-slit okra and keep it for 5 minutes to make it tender. After that drain the water and wash okra with chilled water. This chilled water will help to keep the green color and the crunch intact. Now serve green and soft okra with sandwich.

Fried Okra:
Wash and chop okra. Heat olive oil on pan. Now add okra, add salt and stir. Keep stirring until the whole thing get tender and turns light brown. You may sprinkle little black pepper powder if you want. Now have them either with bread or rice.

Okra Curry:
To make the preparation you need 250 gm okra, cut into medium size, one large onion finely chopped, 2-3 cloves of garlic finely chopped, one tomato finely chopped, chili flakes, olive oil and oregano. Heat little amount of olive oil on pan. Now add chopped onion and garlic in it. Fry them and when they turn brown add chopped tomato and stir. Add salt and keep stirring. When the tomato turns to gravy add okra and keep the lid on for few minutes. A little later open the lid and check whether okra has turned tender. Okra does not take much time to get tender. Before removing from heat sprinkle oregano and a spoon full of butter. This preparation goes well with bread.

Okra in Yogurt:
You need 100 gm yogurt (unflavored) for every 250 gm of okra. In a blender blend yogurt, 1 teaspoon black pepper powder, ½ teaspoon sugar and salt to taste. Now cut okra into medium pieces. Sauté them in little oil; pour the mixed yogurt and allow okra to get tender in it. Sprinkle freshly chopped coriander leaves and green chili. Remove seeds from the chilies before chopping because these seeds may cause stomach pain. Keep the preparation in refrigerator for at least half an hour. This tastes good when it becomes cold. Serve it cold with either rice or bread.
