Fish With Tamarind Sauce


Tamarind; who would ever think that this fruit encased in a brown shell would be packed with so much goodness. Tamarind is a great source of antioxidants that can fight cancer. It also contains carotene, potassium, magnesium and vitamins B and C. Tamarind helps lower cholesterol and promotes a healthy heart and has proven to be a mild laxative. Tamarind can be used as a home remedy for colds and to ease a soar throat.

Though the pulp of the tamarind is sweet when the fruit is ripened, it is generally sour and acidic in taste. The flavour of tamarind has always gone well with seafood.

Fish In Tamarind Sauce


30 gm tamarind
2 tbsp water
1 tbsp vinegar
1 500 gm fish fillet cut into 4 pieces (fish of your choice)
2 tsp of lime juice
2 tbsp virgin olive oil
1 inch piece of ginger crushed
½ cup of onions chopped
1 tsp of minced garlic
1 tsp salt
4 bay leaves
½ tsp black pepper
½ tsp chopped chillies
¼ tsp of lemon zest
1 inch piece of cinnamon
1 cup of water


Soak the tamarind in 2 tablespoons of water and 1 tablespoon of vinegar for 15 minutes. With your fingers rub the tamarind so that it loosens the pulp, seeds and fibre. Strain the mixture through a sieve. Discard any fibre and seed.

In a bowl place the fish, add the lime juice and water and rinse the fish well. Take it out of the liquid and pat dry with disposable kitchen towel.

In a large frying pan sauté the fish lightly in 1 tablespoon of oil, remove and set aside. In that same pan, heat the remaining oil. To the oil add the ginger, onion and garlic and let it sauté for a few minutes. To the sautéing aromatics add the tamarind liquid, salt, bay leaves, black pepper, chopped chillies, lemon zest, cinnamon and water. Bring this to a boil, keep boiling until the liquid thickens. Once it has thickened reduce the heat and add the sautéed fish. Once the fish has been added, let it simmer for about 15 minutes, or until the fish is completely cooked.

The fish can be served on a bed of white basmati rice.
