You must consult a dietitian to know how much calories your body requires to function properly and lose weight at the same time as well in a healthy way. Normally, one requires 1200 calories a day for proper body functioning. So in vegetarian diet, you must have at least 4 or 5 servings of grains.

The quantity of nuts, seeds, beans and substitutes for meat and eggs that should be taken is 5 to 6 oz. fat intake which is a major issue must be taken daily for having enough energy to carry out daily work.

So one is required to take 40 g of fat daily at least everyday. You must not be worried about fat as a little bit is good for health and necessary as well. Along with a good diet, a good exercise regimen is required. So make sure that you do exercise in any form for at least 30 minutes daily. Drink loads of water and be physically and mentally strong to reduce weight.
