How To Make Stuffed Chicken In Olive Oil

Chicken is a very popular bird than its immediate competitor The Duck. While the availability of Duck is questionable depending where you live, chicken is easily available, secondly you don’t have to worry much about its quality, price wise it’s accessible to one and all and lastly it comes guilt free!

You can eat without the guilt that you have after having red meat. Chicken can be easily cooked as its fiber is soft and easy to digest too. Cook it light or make it the spicy way, you can not possibly go wrong with it…unless of course your culinary skills are rarely nurtured by you!

Stuffed chicken may sound a bit complicated stuff for the novice, in the department of cooking. It’s very easy. Once you gather all the ingredients needed to be used in the making of this delicious and nutritious item, you are half way done.

Ingredients

Chicken 1 big size (go for above 2 kgs)
Curd ½ cup
Raw papaya 2
Ginger 2 inch piece
Onion 1 big
Green chilies 5-6 Pistachio
10 gms Raisin
10 gms Almonds
10 gms Garam masala
1 tbsp Cumin seeds (roasted and then grounded)
1 tbsp Coriander powder
1 tbsp Salt add to taste
Chili power, add to taste
Half cooked rice ½ cup
ggs 2 hard boiled ones with the shells
Cooking medium Olive oil For Garnishing
Small or baby potatoes either boiled or fried
French beans, carrots and peas(boiled)
A cube of cheese
A big lettuce leaf

Method

Start by grinding together half of the ginger taken and the raw papaya in to a fine paste. Mix it with the curd. Put salt and keep it aside. Pour two tbsp of olive oil in the pan and fry the rest of the ginger and the onions until they change the color. Mix in all the spices mentioned and then add the rice into it and frying for about 5 to 6 minutes.

Add the rest if the ingredients, minus the curd and the chicken. Mix them well and remove from the flame. Cleaning of the chicken must be done thoroughly, inside out. Make slits on the chicken with the help of a sharp knife. The opening, from where the stuffing part has to be done, is the stomach.

So, hold the chicken upside down and stuff the rice mixer inside. Seal the opening with the help of either a skewer or a strong thread. Place the chicken in the curd mixer and marinate it for 4-5 hours. Heat Olive Oil on the pan. Here I must say, that the Olive Oil must not be heated too much as it looses its properties. So, soon as it gets heated put the chicken in to the oil.

The quantity of the oil should allow the chicken to be submerged into it. Cover it and let it be cooked. Occasionally keep turning the chicken until it turns brown. Taking it out of the pan, drain thoroughly, for you should serve all the stuffed dishes immediately as you should not reheat them. Garnishing and Serving Take a big platter to be served from.

Place the big lettuce leave and Place the stuffed chicken on it. Sprinkle the chicken with freshly grounded pepper and pour a table spoon of melted butter over it. Now take all the boiled vegetables in a bowl and pour some of the remaining Olive Oil in the pan over them and mix well.

Arrange the vegetables around the chicken and the platter and lastly put the grated cheese over them. Slice the boiled eggs in a desired shape and arrange them too. Your stuffed chicken is ready! Tip You can use ghee instead of the olive oil if you want to and in place of rice you can stuff par-boiled vegetables.
