Tartar sauce is a rich, creamy sauce which is a popular accompaniment to various fish dishes. The beauty of the sauce is that it is easy to make and you can make it within minutes. But you need to keep it in the refrigerator for at least an hour before serving.

It is a blend of herbs and vegetables with mayonnaise and is often found in bottled, ready-to-use condition in the stores. But when you make it yourself and serve fresh then it is a completely different experience. So why not start off by making the simplest variety? For the beginners, it is better to get any good brand of mayonnaise as the base. But if you want to make fresh mayonnaise, then it is always better. The interesting thing about this sauce is that you can add anything you like to mayonnaise to make the sauce.

People use gherkins, chives, olives, parsley, capers and lemon juice as the common ingredients. Often dill relish, sweet pickles, minced onions and even hard boiled eggs are used. The ingredients may be blended in a blender or mixed in a mixing bowl.

Making Mayonnaise
Add 2 egg yolks, 2 tsp white wine vinegar, 1 tsp of Dijon mustard. ½ tsp sugar and salt and pepper in a food processor or blender and combine till you get a consistent smooth paste. Now, keeping the processor running, slowly pour about a ½ a pint (approx. 300 ml) of olive oil in a stream through the feeder. Blend until the oil is used up and you get the desired consistency.

The Sauce
To the mayonnaise you will have to add the ingredients of the tartar sauce. If you want to mix the ingredients with mayonnaise in a mixing bowl then you must finely chop all the ingredients. This only can bring out the flavors into the mayonnaise. If you want to blend the ingredients, then you can cut the ingredients into small pieces and blend.

The idea is to bring out the flavor. Usually the ingredients are equal in quantity, but you may vary them according to your taste. Add the lemon juice at the end of the preparation, adding drop by drop until you have reached the taste you like.Always refrigerate for an hour in a covered air tight container before serving.
