How to Make Vegan Blueberry Muffins & Vegan Blueberry Muffin Recipe

Blue berries are considered superfoods as they are rich in anti oxidants and have a repertoire of health benefits ranging from anti cancer properties to raising immunity levels. For vegans, finding baked goods which are entirely vegan can be a challenge. The best option is to bake vegan goodies on your own, as it’s not difficult at all and can save you valuable money.

Blueberry muffins are easy to bake and the ingredients required are easily available. You need to have half a cup of margarine, preferably with an 80% fat content, as it will result in lighter and fluffier muffins. One fourth cup of Apple sauce and the same amount of Soy yogurt for dough that rises well is also needed. Two cups of flour and one and a quarter cup of organic unbleached sugar.

For milk use half a cup of unsweetened soy milk and check the milk pack to make sure that milk and water are the only ingredients.   You will also need to have 2 teaspoons of baking powder handy along with the main ingredient – blueberries, which you should have one and a half cup of.

Take the organic unbleached sugar and grind it to a fine powder in the mixer. Then take the margarine, which has to be kept at room temperature before hand so that it is soft. Cream the margarine and slowly add the fine sugar powder a little bit at a time so as to keep the mixture fluffy and incorporate air in it as you go along.

Add the apple sauce to the mixture slowly all the while continuously mixing. Then to this smooth creamy mixture add the soy yogurt and blend till sooth and even paste emerges. Then mash half a cup of the blueberries by hand so that the mashed paste is not perfect like a paste but has more of chunks and blueberry juice.

Then add the mashed blueberries to the mix and mix with your hands. The paste will get a colour form the mashed blueberries. Sprinkle the rest of the blueberries by into the mixture and mix once for spreading them evenly.
Fill the batter into muffin cups an bake at 375 F for 25 minutes. Serve hot !
