Lamb Curry Recipe

Lamb curry is tasty and as well as healthy. Lamb is very light and easy to digest.

Ingredients:
•    500 gm shoulder portion of lamb meat
•    Potato (diced)
•    Carrot (diced)
•    Onion
•    Ginger
•    Garlic
•    Cinnamon,
•    Cardamom
•    Clove
•    A pinch of Turmeric powder or paste
•    Salt
•    Olive oil
•    Milk
•    water

Preparation

Cut the meat into small pieces and eliminate the bone from it as much as possible. Then wash and rub salt on the meat and keep them aside. Peel of large potato and carrot and cut them in pieces that will match with the piece of the lamb. Paste onion, garlic and ginger. Heat oil in a pan and fry cinnamon, clove, cardamom and black pepper seed. Add onion and garlic and the ginger at last.

Add a pinch of turmeric powder for some color and flavor. Fry them well. Add lamb and keep stirring. Add carrot and potato. Add salt and keep stirring. Pour water and keep the lid on till they turn tender. When they are tender enough and the preparation is almost ready add milk and cook for another 2 minutes. Remove from heat and serve it with fresh bread or buttered fried rice. If you want to make the curry hot you can add black pepper powder or chili flakes.

Preparation of Buttered Fried Rice:

It is very easy to do. Add salt in a bowl of water and boil it. Add lime juice in it. Boil some basmati rice in it. When the rice gets tender, drain the water. Now heat some butter or butter oil in a pan and fry freshly chopped carrot and cabbage. You may add green peas too with them. Add the rice and stir for five minutes. Add salt and pinch of sugar in  it. Sprinkle freshly ground black pepper powder over the preparation. Serve it with lamb curry.

Instead of lamb you can use other meat too such as mutton, chicken, etc. So if you want to make the preparation with mutton, boil it separately in pressure cooker because mutton takes more time to get tender than the vegetables. Boiled egg can be added in the rice. Just cut boiled eggs into two pieces and serve them with rice.
