Spinach and Potato Cutlets

Often wonder why your child hardly eats any vegetables. It is the case in most families. The trick is to make things that have the goodness of all the vegetables in such a way that the kids have no idea what they are eating. This recipe of cutlets can also be eaten as a meal; or part of a meal. Its great as a snack too.

Boil three large potatoes in a cooker till soft; it will need at least six whistles. Allow it to cool and remove the skin. Mash the potatoes in a vessel and keep aside. Boil half a cup of green peas and add to the potatoes.

Take about six to seven spinach leaves. Make sure there are no holes in them. Clean well and blanch them. Blanching means put the leaves in boiling water with salt for not more than two minutes and then remove and dip in cold water. Squeeze out all the excess water and chop finely.

Add the spinach to the potato mixture. Also add one finely chopped green chilli, some finely chopped coriander and one inch piece of grated ginger. Now add some salt and two table spoons of corn flour. Corn flour is needed to bind it together.

Mix all the ingredients well using your hands and press on the green peas as well. Make small balls and flatten them and fry each cutlet on a non stick pan. In case it is getting stuck to the pan add a bit of corn flour. If you don’t have corn flour you can soak two slices of bread and squeeze out all the water and mix it into the mixture.

This will also allow the cutlet without sticking to the pan.This can be eaten with ketchup. It is sure to be a hit with the kids and adults as well. The amazing thing is that you don’t realize you are eating so many healthy things all in one cutlet. It is good as an after school snack as well and is also sure to be a hit at your parties and dinners that you may have.
