Pleasing to the eye and satisfying to the taste buds – the tomato is a wonderful vegetable. Vegetable? In fact it is a fruit or shall we say a berry. The bright red tomato color brightens up every dinner table, be it raw or cooked.

The tomato not only has a fine appearance but is also a storehouse of nutrition. Let us take up its benefits one by one:

The chemical lycopene present in tomatoes gives it the red color. Numerous studies have concluded that the lycopene present in tomatoes helps reduce the risks of various kinds of cancerprostate, pancreatic, colon, lung, and breast cancers. Researches have shown that in processed tomatoes the lycopene content increases since cooking leads to the breaking down of cell walls. Tomatoes, when consumed with small amounts of fat ensures better absorption of lycopene

            Now that we know about the wonderful benefits of the tomato let us make some heart warming thick tomato. The thickness in this soup has been achieved by the addition of a potato instead of cream.

            Ingredients:

            500gms ripe red tomatoes
            1 small onion
            1small potato
            1 medium sized carrot (optional)
            5 cloves of garlic
            Salt to taste

            Seasoning of your choice: coriander chopped/basil/dried mint leaves

            Recipes :

            Wash and cut the tomatoes into small pieces. Slice the onions and chop the potatoes. If you are using carrot chop it into small pieces.

            In a vessel add all the ingredients except the seasoning and cook till all the vegetables are well cooked. To make it faster you can also pressure cook all the vegetables. Allow to cool.

            Once the mixture is cool puree the vegetables in a blender and pass through a sieve. Return the strained soup to the fire and allow to simmer for about 10 minutes. You can adjust the consistency of the soup according to your choice.

            Add the seasoning of your choice and enjoy hot tomato soup with buttered dinner rolls.
