Ingredients

Carrots – 4 medium
Capsicum – 1 medium
Cauliflower  – ½ small
Cabbage – ½ small
French beans – 100 gms
Roasted peanuts – 4 tbsp
Lemon juice – 1 tsp
Salt – to taste
Thin coconut milk – ¾ cup
Bean sprout – 100 gms
Oil – 1 tbsp

For red curry paste

Dried whole red chillies – 8
Lemon grass stalk – 4 inch
Coriander seeds – 4 tspn
Cumin seeds – 2 tsp
Pepper corns – 6
Onion, peeled and sliced – 2 medium
Garlic – 4 cloves
Salt – to taste

    Nutritional Value

    This dish supplies good amount of fibre from vegetables and sprouts. The carrots used are not peeled, which increases the fibre content.
