Toffee Coffee Mix Recipe

Are you always looking out for things to pop in to your mouth. Here is a recipe for the adults sweet tooth. Children may or may not like it as it has coffee in it and may seem a bit bitter. But for the coffee lovers it is simply divine.

You need to get paper cups. The small size ones. Keep them in a baking tray. In a pan mix together about five ounces of white butter and an equal amount of Castor sugar. Cream this well. Creaming means it should become soft after mixing. Whisk two eggs in another bowl and slowly pour the ebbs into the creamed mixture. In a third pan dissolve one teaspoon of coffee powder with water and mix it well till it has dissolved. Add this to the mixture as well. Beat the entire mixture till all the ingredients are mixed well. Lastly sieve six ounces of self raising flour and add to the mixture. Now do not beat the mixture; instead fold it in using a wooden spoon. Do this slowly till all the flour is folded into the mixture. Fold in one direction only.

Add a bit of vanilla essence to remove the smell of the egg. Using a spoon; scoop the mixture and put it in to the paper cups and bake for ten minutes at one hundred degrees Celsius for ten minutes. Check to see if done and remove from the oven.

For the icing dissolve two teaspoons of coffee with four teaspoons of hot water and mix well. To this add five ounces of icing sugar. If it is too thick add some more water. But do not make it too watery. Put this in a piping bag and pipe swirls of icing on top of the toffees. If the kids are going to eat it you can easily substitute the coffee that you are using in the icing by putting chocolate powder instead. You can sprinkle some white chocolate flakes over it.

This is really easy to make and also very quick. It looks good when served to guests at a party as part of the dessert.
