Chicken is low in fat, has lots of protein, is rich in vitamins and minerals and tastes wonderful. You can bake it, steam it, fry it, sauté it, roast it, grill it. Its versatility allows it to be served with any meal – breakfast, lunch, dinner.
Here we have a simple chicken mix. Let us see with what methods can be used to cook it and with what meals this can be served.Versatile Chicken

Ingredients:

500 gms fine chicken mince
1 cup fresh coriander
2 green chillies
1 inch piece ginger
1 egg beaten
¼ cup cream
½ cup bread crumbs or graham cracker crumbs
Salt to taste

Recipe:

This is a very simple version of a chicken. Once having tried it you can vary it according to your own preferences especially the seasoning. The cream adds softness to the cooked chicken and makes it juicy too. The bread crumbs serve as binders so does the egg.

Grind coriander, chillies, and ginger to a fine paste. Add the paste to the chicken mince. Mix the egg, cream, bread crumbs and salt. Mix well and allow to rest in the fridge for around two hours.

1. To prepare kebabs in an oven, wrap the chicken mix on skewers and bake at 200°C for 10 minutes. Baste the kebabs with oil and bake again for another 5 minutes or till golden brown. It serves as a good meal starter or snack.

2. Shape the entire chicken mince in a log and wrap in foil. Place the log in a baking dish and bake in a pre-heated oven at 180°C for 45minutes. When cooked slice the log and enjoy your chicken slices. This can be served as a side dish for dinner.

Let us get a little innovative.
Keep the bread crumbs and egg aside and mix the remaining ingredients. Allow to rest in the fridge for around two hours to let the flavors infuse into the chicken.

1. To cook in a pan, lightly coat a frying pan with oil. Shape the chicken mince into patty shapes. Dip in egg and coat with bread crumbs. Add the patties to the pan when oil is hot. Cook on a medium heat till golden brown on both sides. You can have these as burger fillings.

2. How about trying out some nuggets? Shape the chicken into balls, dip in egg and coat with bread crumbs. Deep fry in hot oil on medium heat. The nuggets will be done when golden brown. Goes down well with children and serves as an excellent starter.
