Wheat is a major food ingredient that is widely used all over the world and is a wholesome nutritious food. But some people may be allergic to wheat foods and the symptoms include chest pain, bloating, diarrhea, nausea, vomiting, eczema, sneezing, skin rashes, swollen throat and tongue, tiredness, lethargy, cough, runny nose, itchy and watery eyes etc.The condition improves once the wheat is withdrawn from the diet. Here are some tasty wheat free recipes.

Crispy King Prawns

This is very popular item mostly served in parties and buffets and can be wheat free with some simple alterations.

Ingredients

Cooked, veined and peeled king prawns- 30
Wheat free and gluten free flour, preferably tapioca flour mixed with white rice flour- 50 gram
Corn flour- one tablespoon
Baking powder- twp teaspoon

Ground nut oil for deep frying and water for making the batter

Preparation

Dry prawns so that the batter will stick to the prawns. Make the batter by mixing corn flour, tapioca and rice flour, baking powder and water. The batter must be thick so it gets coated over the prawns and won’t slip off. Now heat the oil in a frying pan and drop six prawns coated with batter and cook the prawns till the batter gets puffed and brown in about two minutes. Take the fried prawns out and keep on a kitchen paper to drain the excess oil and serve ho.

Spicy Burgers

Burgers are the favorite of most of the people and wheat allergens can also enjoy burgers.

Ingredients

Olive oil- 2 teaspoon
Finely chopped large onion- 1
Hot spice mix- 1 tablespoon
Ground cinnamon- 1 teaspoon
Extra lean ground beef, bison or lamp- 450 gram
Peeled and grated carrot- 1
Chopped almonds- 50 gram
Wheat free and gluten free bread crumbs- 50 gram
Grated lemon zest of 1 lemon
Large beaten egg- 1
Olive oil for frying
Black pepper to taste

Direction

Heat a pan and add 2 teaspoon olive oil to it to sauté the onion then combine it with spice mix and cinnamon and keep it in a large bowl. Mix the onion mixture with grounded beef, almonds, carrot, breadcrumbs, lemon zest, beaten egg and pepper powder. Mix the entire mixture very well and divide in to 8 equal parts and shape it in to burger shape. Fry the burger in olive oil quickly and keep on a non stick baking pan for further baking for about 15 minutes. Serve it by keeping inside a wheat free roll along with lettuce leaves and tomato slices.
