White Pumpkin Recipes

White pumpkins are very nutritious – full with different minerals and water. Because of low calorie it is an ideal food for the obese. Here are two easy preparations of white pumpkin.

Stuffed White Pumpkin

Ingredients
•    1kg white pumpkin
•    75 grams tiny cubed pieces of mutton
•    2 large chopped onions
•    2 tablespoons oil
•    ½ teaspoon cumin  seed
•    2 green chilies
•    ½ inc h ginger
•    8 cloves garlic
•    2 twigs celery
•    ½ teaspoon turmeric powder
•    Salt
•    50 grams chopped cashew-nuts
•    20 grams raisins

Preparations:
Peel the pumpkin, cut a thick slice from the top and keep it aside as a lid. Remove the pulp from the inside of the pumpkins with a spoon, being careful not to tear it.

Fry the onions in oil until golden brown, add the finely chopped ingredients (chilies, garlic, ginger, and celery), turmeric, mutton, salt and the pumpkin pulp. Brown on a low fire until it dries and the mutton is cooked. Mix in cashew nuts and raisins. This is the stuffing.

Fill up the cavity of the pumpkin with the stuffing and cover it with the pumpkin lid. Apply a little oil to a thick flat bottomed container, place the pumpkin in it. Close the container with a tight fitting lid with water on the lid. Cook on a low flame, for 10 minutes. Tilt this water into the container replacing the water on the lid. Cook for further 45 minutes to 1 hour until the pumpkins fairly well cooked. Add the lid water when required replacing it again. Take care to see that the pumpkin does not flop. Serve hot.

This is an attractive party dish and it tastes good.

White Pumpkin Fry:

Peel pumpkin and make thick D – shape slices. Make pocket in the slices. Now grate coconut. Mix some mustard powder in it. Mix well so that the thing turns to a paste. Now fill up the pocket of the pumpkin with the paste. In a separate container beat eggs and corn flour accordingly. Now soak the pumpkin pieces in the mixture. Heat oil in a container and deep fry pumpkins. Serve it hot with sauce and a drink. Instead of grated coconut you can also use mashed potato as a fill up.
