Bekti is a popular fish and it is famous because of its delicious taste. This fish has hardly any bone. This bekti fish tastes best when it is fried.

Here are few recipes of bekti.

Fried bekti

Ingredients
•    6 Bekti filet
•    Two onions
•    1 whole garlic
•    1 inch ginger
•    2 string coriander leaves
•    Parsley leaves
•    Salt
•    Black pepper
•    Green chili
•    Cooking oil

Preparation:

Wash fillet well and keep them aside to drain the water. Grind onion, garlic and ginger into a paste. Strain the juices from the paste. Mince coriander leaves and chili. Number of chilies depends on how hot you want the fries to be. If you want it just for flavor then 1 or 2 will do. Eliminate seeds from chopped chili. Now mix minced coriander and chili into the marinade. Add 1 teaspoon black pepper powder and salt in it. Marinate the filets in this marinade for 3-4 hours.  In the mean time make the batter. To make it you need corn flour, eggs and salt. Mix all this things in blender. In the batter also you may add chopped parsley or coriander leaves.

Process:

Heat oil in a deep pan and check if the oil is hot enough. Dip the marinated filet in the batter and deep fry it in the hot oil. After frying it lightly remove it from heat. Fry all the fillets in the same manner. But before serving fry the fillet for the second time. Double frying makes the fries crunchy. Serve it hot with fresh salads and hot or cold drinks. In summer people will prefer cold fizzy drinks with it. But in winter your guest will surely want to have it with tea or coffee.

With the same marinated fillet you can prepare fry in another way. Do not soak them in batter. Soak them in whipped egg. And then roll them on crumbs. Repeat the process to make the outer layer and then deep fry in the earlier process.

Tips: after frying keep these fries on tissue paper so that it will soak most of the oil.
